Ask Newtown Experts: Choosing A Steak for Your Summer BBQ

We asked the meat cutters at Butcher's Best how to pick the perfect cut this summer.

Feel that 80-degree heat? With Memorial Day past, summer is in full swing (more or less), and if you didn't bust out the grill last weekend, you're probably at least getting ready to. So why not turn to the local experts, the meat cutters at Butcher's Best Market on South Main St. in Newtown?

We asked meat cutter Ryan Marcoux what the absolute best choice is for steak.

"Porterhouse, obviously," he said (that's him posing with a choice porterhouse in the photo.) "It's the king of steak. You get the best of both worlds, New York strips and fillets."

Sirloin gets great flavor, he says, and for personal use, he likes ribeyes best. "Because of the marbling, more fat gives it more flavor."

And if you're looking for something you can't get most other places, check out Butcher's Best's prime London broil.

"Sure, other places will carry London broil, but not as prime as what we have," says Marcoux.

Butcher's Best also produces three flavors of marinades, made in-house: honey teriyaki, balsamic marinade and citrus ginger.

"But with a good quality steak, you shouldn't have to hide it behind marinades," says Marcoux. "Your basic salt and pepper should do the trick."

Butcher's Best meat comes from all-natural Cabbage Hill Farm in Mount Kisco, NY. Looking to pair a beer with your steak? We also asked Sandy Hook Wines & Spirits owner Brian Mendes what beers are best for the summer.
